Decorate A Luau Cake

Finish any summer party or barbecue in style with a Hawaiian themed luau cake complete with its own grass skirt and cookie lei. You can choose a tropical cake flavor such as pineapple or coconut to add to the theme, but it isn't necessary. The cake itself will be completely hidden when decorated so feel free to select a chocolate cake or any flavor that your guests prefer. Add this to my Recipe Box.

Instructions


1. Spread about two cups of coconut onto a cookie sheet and bake the coconut in a preheated 350 degree oven for seven to eight minutes. Stir the coconut halfway through the baking time with a spatula to prevent it from burning. The coconut is done when golden brown.


2. Remove the toasted coconut from the oven and let it cool completely before continuing.


3. Cover the top and sides of a cake with white icing. The cake must be completely cool before you begin to apply the icing.


4. Scoop up a handful of the toasted coconut and gently pat it onto the sides of the cake. Continue until all the sides are covered with toasted coconut.


5. Fill a small bowl approximately 1/2 inch deep with colored decorating sugar. You can use just one color or fill several bowls with different colors of sugar depending on what colors you want to use on your cake.


6. Cover the top of a flower shaped cookie with white icing. You can use store-bought or homemade cookies but they must have a hole in the center.


7. Dip the cookie into the bowl of colored sugar to cover the icing.


8. Repeat steps five through seven to create 20 to 22 colored flower cookies.


9. Thread a 30-inch piece of shoestring licorice through the center of the cookies and tie the ends of the licorice together to create an edible lei for your cake.


10. Arrange the cookie lei on top of your luau cake.
