Cook Hawaiian Salmon

Any type of fish can be marinated with a Hawaiian-style sauce.

If you go to a traditional luau in Hawaii, you'll find salmon, but most likely, it will not be cooked. Traditional luaus serve a salmon dish known as lomi lomi. This dish uses salmon that has been cured in salt, and shredded. The shredded salmon is combined with tomatoes, onions and served ice cold. However, modern day Hawaiian cooking includes a lot of grilling, including grilling salmon. Grilled salmon is typically marinated with ingredients that reflect sweet and savory Hawaiian flavors. Add this to my Recipe Box.

Instructions

1. Combine 1/2 cup pineapple juice, 2 tbsp. soy sauce, 2 tbsp. mustard, 1 tbsp fresh ginger, 1 tbsp honey, 3 tbsp. minced garlic, 3 tbsp. minced ginger, and the juice of one lemon and one lime in a large bowl.

2. Place the salmon fillets in the marinade and cover with plastic wrap. Refrigerate the fish in the marinade overnight.

3. Prepare the grill for medium-high heat, and brush the grates with vegetable oil.

4. Place the marinated salmon on the grill and cook for three to four minutes on both sides, until the fish flakes easily with a fork.

5. Allow the salmon to rest for at five minutes before serving.
