Build A Barbecue Pit For A Pig

To roast a pig in the ground you need to dig a proper pit to hold the animal.


For a traditional "pig pickin" barbecue party or a luau, you need to roast the pig in a earth pit. A whole pig is slow-cooked over the course of a day in the ground and comes out juicy and tender. To ensure that the pig is cooked all the way through, you'll need to prepare the pit a certain way to maintain the constant heat needed to cook the pig. Does this Spark an idea?


Instructions


1. Dig a pit in the ground that is wide enough for the pig and has a space of at least 6 inches all the way around. Dig it deep enough to fit the entire pig at least a foot below ground level.


2. Light a fire in the pit and have it burn continuously for several hours. Keep feeding it wood so that it doesn't burn out. Place rocks all around the fire and in the fire to allow them to get hot.


3. Let the fire burn down while you put three of the hottest rocks inside the pig. Wrap the pig in banana leaves.


4. Place the pig over the rocks and burning fire embers. Cover the pig with insulation material such as pine needles. Place more hot rocks from around the fire on top of the needles.


5. Add vegetables wrapped in aluminum foil between the hot rocks if you want. Fill the pit in with dirt. It will need to cook for close to half a day.
