A simple underground barbecue pit can be used to cook meats with an extra special smoky barbecue taste. Building an underground BBQ pit is a very simple procedure that requires no special tools, just an open space to dig in your backyard. The most difficult task of all when building and using an underground pit may be waiting for the food to cook, as it must lay smoking in the pit for several hours before it is ready. Instructions
1. Dig a hole in your backyard 3 feet by 3 feet square and 3 feet deep. The pit can be larger if you so desire. Store the subsoil you dig out in a pile for use later.
2. Heat a bed of coals in a wheelbarrow when you are getting ready to cook. You need enough coals to fill the pit 2-1/2 feet deep. You can use regular charcoal or make your own coals from burning pieces of wood, which will take about two hours.
3. Fill the pit with the hot, glowing coals, loading them in with the wheelbarrow, then smooth them out with a shovel. Carefully lay the sapling pieces, having been soaked in water, onto the coals to form a makeshift grill on top of them.
4. Wrap each piece of meat tightly in a brown paper bag or unwaxed butcher paper. Cover the brown paper with two layers of soaked newspaper, making sure it clings to the package. Place your meats on top of the grill.
5. Cover the pit with a rigid metal or wood panel. Use the subsoil you set aside to plug any holes where you see smoke escaping from the enclosed pit, then lay the rest of the soil on top of the cover. Lay an old blanket on top of the soil.
6. Let the meat cook in the pit overnight (12 to 16 hours) and then remove everything covering the pit and remove the meat.
