Heat Sea Salt

Sea salt is available in a variety of granule sizes and shapes.


Transferring heat to sea salt blocks and granules allows them to become the cooking medium. Sea salt is naturally harvested directly from the sea or seaborne sediment salt deposits. This direct sourcing gives the sea salt distinct flavor characteristics and mineral content. Sea salt retains much of the applied heat, so after heating, cook and season thin slices of meat, vegetables or small shellfish on top. Carefully heat sea salt to avoid injury and damage to the salt. Instructions


Oven


1. Place the sea salt slab or granules onto a sheet pan and slide the pan into a cold oven.


2. Set the oven temperature to 400 degrees F and wait approximately 45 minutes.


3. Test the temperature of the salt by getting a finger wet and flicking a few drops of water onto the salt. The salt is plenty hot for cooking when the water droplets sizzle, bounce and then quickly evaporate.


Electric Stove


4. Place the sea salt slab or granules into a room temperature skillet on a burner that is turned off.


5. Turn the heat to the lowest setting and give the burner 20 minutes to heat up.


6. Raise the temperature to medium-low and continue heating the salt for 20 minutes.


7. Test the temperature of the salt by flicking a few drops of water onto the salt. The salt is hot enough for cooking when the water droplets sizzle, bounce and evaporate.


Gas Stove or Grill


8. Place the sea salt in a skillet first or directly over a low flame of a gas stove or grill. Sea salt slabs placed directly over a flame will efficiently heat but may discolor.


9. Increase the flame strength to a medium-low after the sea salt has been heating for approximately 15 minutes.


10. Heat the sea salt on medium low for another 20 to 25 minutes.


11. Test the temperature of the salt by flicking a few drops of water onto the salt. The salt is ready for cooking when the water droplets sizzle, bounce and evaporate.
